Fried Rice
There are a million ways to make fried rice. Here’s a basic recipe for a quick meal using mostly leftovers. Clean out your fridge and make something tasty (not just for breakfast)!
INGREDIENTS
1 tbsp dark soy sauce (optional)
2 tbsp regular soy sauce
1.5 tbsp minced garlic
3 tbsp butter
1 tbsp sesame oil
Salt & pepper to taste
4 cup cooked white rice (preferably cold & broken up. Even better if day-old!)
2 Chinese sausage, hot dogs -or- other meats; sliced
4 eggs
1 lime (optional)
DIRECTIONS
In a hot wok, heat two tablespoons of oil
Add in Sausage/hot dog toss until browned
Add garlic. Toss
Before garlic fully browns , add rice and toss
Add butter, and both soy sauces. Toss until incorporated
Push rice to one side. Crack eggs into the other side and scramble quickly -OR- fry eggs in a separate pan. Toss to incorporate scrambled eggs
Taste fried rice, add salt and pepper to taste
Turn heat to medium and drizzle sesame oil and toss
Plate fried rice and optional squeeze of fresh lime juice to finish
Get creative! There are so many ways to customize this dish:
Add scallions, bacon, corn, carrots, fried shallots
For a sweeter fried rice, omit lime and add 1/2 tbsp ketchup and 1 tbsp oyster sauce
For kimchi fried rice, add bacon or pork belly instead of sausage. Add chopped kimchi before the rice goes in
