Pork and Prawn Dumplings
What we all need to be eating.... like right now! This warm, comforting and spicy dish is perfect for enjoying right now, or freezing for later. The dumplings turn out soft and silky, while the filling is juicy and flavorful. YUM.
*Reminder* When freezing dumplings, to place them on a tray, not touching and allow to freeze completely before putting them into a freezer bag. This will prevent them from sticking together!
INGREDIENTS
1 tbsp soy sauce
1 tbsp shao xing wine
1 tsp black pepper
Generous pinch of salt
1 tbsp sesame oil
1 heaping tbsp mince garlic
1 lb ground pork
1 lb shrimp, finely chopped
1 package wonton wrappers
3 scallions, chopped & divided
1 egg
1/4 cup chicken stock
1 tbsp cornstarch
DIRECTIONS
Using chopsticks mix pork and shrimp. Add garlic, pepper, salt, oil, whites of the scallions. Mix. Sprinkle cornstarch. Mix.
Add wine, soy sauce, stock. Stir with chopsticks until mixture thickens and pulls away from sides of the bowl into a mass
Prep a tray with parchment paper
To make dumplings, place 1 tbsp filling in the center of the wrapper. Gold over into triangle and seal with water
Place on tray to freeze for later. Once frozen put in freezer bag
To enjoy immediately place dumplings in boiling water for 5 minutes. 9 minutes for frozen
Remove from water with mesh strainer. Serve immediately with a generous spooning of chili oil over top. Garnish with greens of scallions and cilantro
