Kalbi/Galbi (Korean Short Ribs)
🎶 Hey, I just ate food. This is crazy! So here’s some more food. So Kalbi maybe! 🎶
INGREDIENTS
2 Tbsp sesame oil
2 tsp black pepper
10 cloves garlic, finely chopped (approximately 4 Tbs)
6 green onions, finely chopped
1 Korean pear grated
3 lbs beef short ribs approx 1/4” thickness
1 cup Beef stock or water
1 cup soy sauce
3/4 cup brown sugar
1/4 cup mirin
1/4 cup rice wine, dry white wine or vodka
DIRECTIONS
MARINATE
Combine all ingredients except for meat. Mix until sugar is dissolved. Add meat. Store in a plastic bag or airtight container for at least 1 hr or overnight (recommended)
Remove meat from marinade and grill, pan sear or oven broil to cook
GRILL
heat grill to 450°. sear each side of ribs while basting with marinade for 2-3 minutes per side until edges are lightly charred
SEAR
in a non-stick skillet, heat 1/2 tbsp oil and sear meat on high heat for 2-3 minutes per side
OVEN BROIL
Preheat oven to 450°
Place ribs in a single layer on a foil-lined sheet
Change oven to broil on medium heat
Broil ribs for 8 minutes. Flipping halfway through
