Kalbi/Galbi (Korean Short Ribs)

🎶 Hey, I just ate food. This is crazy! So here’s some more food. So Kalbi maybe! 🎶

INGREDIENTS

  • 2 Tbsp sesame oil

  • 2 tsp black pepper

  • 10 cloves garlic, finely chopped (approximately 4 Tbs)

  • 6 green onions, finely chopped 

  • 1 Korean pear grated

  • 3 lbs beef short ribs approx 1/4” thickness

  • 1 cup Beef stock or water

  • 1 cup soy sauce

  • 3/4 cup brown sugar

  • 1/4 cup mirin

  • 1/4 cup rice wine, dry white wine or vodka

DIRECTIONS

MARINATE

  1. Combine all ingredients except for meat. Mix until sugar is dissolved. Add meat. Store in a plastic bag or airtight container for at least 1 hr or overnight (recommended)

  2. Remove meat from marinade and grill, pan sear or oven broil to cook

GRILL

  1. heat grill to 450°. sear each side of ribs while basting with marinade for 2-3 minutes per side until edges are lightly charred

SEAR

  1. in a non-stick skillet, heat 1/2 tbsp oil and sear meat on high heat for 2-3 minutes per side

OVEN BROIL

  1. Preheat oven to 450°

  2. Place ribs in a single layer on a foil-lined sheet

  3. Change oven to broil on medium heat

  4. Broil ribs for 8 minutes. Flipping halfway through
