Magic Coffee Cream

Happy Monday, everyone! Let’s make the most of this week :)

NO DAIRY, NO EGGS! This recipe defies science and is only 3 ingredients! Use this magical cream for more than just your morning pick-me-up.

INGREDIENTS

  • 2 tbsp instant coffee (DO NOT use 3-in-1 varieties, do not use coffee grounds)

  • 2 tbsp hot water

  • 2.5 tbsp sugar

  • 2 drops vanilla extract

DIRECTIONS

  • Combine all ingredients. Stir until sugar and coffee are dissolved, paste-like texture

  • Use a stand or electric mixer (or if you’re desperate a blender bottle or whisk) to mix on high speed for 5-6 minutes until smooth, glossy, and forms semi-stiff peaks

  • Make sure your bowl or jar is substantial. Like “magic," it will be a very voluminous result!

TO MAKE AN ICED LATTE

  • Fill a glass with ice and 1.5 cups milk or milk substitute. Unsweetened vanilla almond milk is recommended

  • Top with 1/3 cup magic coffee cream

  • FOR BEST TASTE, stir to combine -or- pour into another glass (the ice and pouring motion will do the mixing for you!)

(DM for alternative ratios; use to top a cake or layer as a mousse for dessert!)
