Brown Sugar Banana Bread
This banana bread is like no other. The crusty cinnamon brown sugar top sets it apart from the rest! Put those brown ‘naners to work!
Note: adjust broiling time and temp based on your oven. Some may broil much faster!
INGREDIENTS
2 large eggs
4-5 very ripe bananas, mashed (about 1½ cups)
½ cup chocolate chips (optional)
½ cup chopped nuts (optional)
2 tsp cinnamon
1 tsp cinnamon for topping
1 tsp vanilla
1.5 cups all-purpose flour
1.5 teaspoons baking soda
¾ teaspoon kosher salt
3/4 cup (packed) brown sugar
Another 1/2 cup brown sugar for topping
⅓ c plain unsweetened apple sauce, whole-milk Greek yogurt, or sour cream
(½ stick) unsalted butter, room temperature
DIRECTIONS
Preheat oven to 350°
Prepare a loaf pan, line with parchment paper
Using a whisk or electric mixer , cream butter & brown sugar until smooth and fluffy
Add ripe bananas and mix until fully incorporated and not lumpy
Mix in eggs, 1 at a time
Mix in apple sauce, vanilla, and cinnamon
Gently mix in baking soda salt and flour
Add in the optional mix-ins, such nuts or chocolate
Pour batter into loaf pan
Smooth top with wet spoon or offset spatula
Mix brown sugar and cinnamon
Gently and evenly sprinkle cinnamon sugar mixture over the top
Bake 60 minutes
Remove and cool for at least 30 minutes
