Garlic Cheese Curds
There’s really nothing more to say. Fried cheese. Cheese that is fried. With garlic. Run, don’t walk! Mix things up, toss in ranch seasoning, add sliced jalapeños, drizzle with hot sauce, go crazy!
INGREDIENTS
3 heaping tbsp finely minced garlic
Pinch paprika
1/2 tsp salt
1 small egg
Oil for deep frying (at least 2-3” deep)
2 lbs cheese curds (separated & frozen for at least 1.5 hrs)
1 & 1/2 cup buttermilk -or- milk + 1 tsp vinegar
1 & 1/2 cup flour
1/2 cup flour for dusting curds
DIRECTIONS
Heat oil to 375° F
Whisk together buttermilk, flour, baking soda, garlic, and egg until smooth
Toss frozen curds in plain flour. Shake off excess
Coat dusted cheese curds with batter, a few at a time – chopsticks is the easiest!
Carefully place in hot oil
Fry a few at a time, for several seconds, until golden brown (approx. 45-60 seconds)
Reduce heat if curds are frying too quickly
Let cool and drain on a paper towel or wire rack
Enjoy immediately for best taste
