Butter Cookies
These classic cookies are simple yet addicting. Store them in a ziplock bag or airtight container to retain their chewy texture and rich buttery flavor. We doubt they’ll last long enough for storage though!
INGREDIENTS
1/2 cup granulated sugar
1/2 cup packed brown sugar
1.5 teaspoon vanilla extract
2 large eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda must be fresh!
1 teaspoon salt
1 cup (2 sticks) butter, softened
DIRECTIONS
Combine dry ingredients in one bowl set aside
In a stand mixer or using an electric hand mixer, cream butter and sugars until light, fluffy and smooth
Beat in vanilla
Best in eggs 1 at a time
On low, beat in dry mixture 1/3 at a time
Scrape the edges of the bowl cover with plastic wrap and refrigerate for 20 minutes
Preheat oven to 375°
Using a cookie scoop, drop 1.5” balls onto a lined tray. Gently press down on the center to flatten out to 2”
Bake for 9-11 minutes depending on your oven
Remove and place on cooling rack immediately
